Happy almost Fourth of July! I've been busy doing some projects, but they are taking me a lot longer to do than I thought :) So, I get the chance instead to share with you one of my all time favorite dessert recipes...and super yummy scrumptious apple cake. And, it's super easy to make!
Here are the ingredients:
3 egg whites
1 1/2 cups of sugar
1 teaspoon vanilla
1 cup applesauce
2 cups all purpose flour
2 teaspoons of cinnamon
1 teaspoon baking soda
1/4 tsp salt
2 whole apples sliced
For the topping:
yogurt (plain or vanilla...or whatever you want)
brown sugar to taste (if you want to sweeten up your yogurt, nix it if you don't)
dash of cinnamon
Lets get started!
Beat egg whites until foamy and then add sugar and vanilla. In a separate bowl, combine flour, cinnamon, baking soda and salt. Now, add both mixtures together.
Spray a springform pan with cooking spray, and lay out apple slices in a single layer on the bottom. Pour mixture over apples.
Bake for 35 minutes in 350 degree oven.
Cool cake before you add the topping. Just mix yogurt with brown sugar, and spoon onto sliced cake. Finish with a dash of cinnamon.
Yum yum yum. :)
This cake is sooo yummy and really filling and dense. But not 'too' naughty. It's the perfect compliment for any dinner....and even better as left overs the next day :) I may or may not have eaten half of this cake in one day....I'm just sayin' :)
